Traditionally Smoked

Simpson's buy fresh fish daily from across the road at Hull's Fishgate Market. Fishgate is the sole European BRC/EFSIS accredited port, & one of the most modern. We also buy frozen at sea fish from our contracted vessels that we've worked closely with for several years. The fish is frozen within 2 hours of catch thereby locking in the goodness.

 

All fish are hand brined using colourings from natural plant extracts then slowly smoked over sustainable Beech & Oak chips in traditional kilns
